I don't usually do very much baking, but when I do I like to make recipes that aren't all "fluff"...I used the Applesauce Oatmeal Muffins recipe from Tosca Reno's Eat Clean Cookbook as the base for the batch of muffins I made a couple weeks back. With the addition of coconut and chocolate to sweeten them, they didn't last long around our house....
Grocery List:
1 Cup dry old fashioned oatmeal flakes
1 Cup applesauce (I used sweetened as I found them to be rather bland with unsweetened)
1/2 Cup almond milk
2 egg whites
2 Tbsp ground flax seed
2 1/2 Tbsp canola oil
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
3/4 Cup whole wheat flour
1/4 Cup raisin
1/4 Cup chocolate chips
1/4 Cup dry medium coconut
1/4 Cup goji berries
Preheat oven to 375 degrees. Line muffin pan with liners or spray with cooking spray.
In a medium bowl, combine first six ingredients
In another medium sized bowl, combine the remaining dry ingredients. Make a well in the center of the dry ingredients, and pour the wet ingredients with the dry.
Stir until combined.
Fill each muffin cup 3/4 full and throw them in the oven.
Bake for 15-17 minutes or until an inserted toothpick comes out clean.
Remove from oven and let cool.
Enjoy!
