Here is a fairly easy dish that makes its rounds in our house every couple weeks.... we usually eat half and save the other half for lunch (or breakfast) the day after!
Grocery List:
1tbsp vegetable oil
1tsp garlic
1/2 cup black beans
1/2 cup kernel corn (canned works great)
8 eggs
1tsp sour cream
1tsp red curry paste
2 green onions chopped
2 vine-ripe tomatoes chopped
1/2 cup grated cheddar cheese
1/4 cup grated Parmesan cheese (optional)
1) Heat oil and garlic in a pan at medium heat
2) Add beans and corn, and cook til warm and moisture is gone
3) Beat eggs, sour cream and curry paste together in a bowl
4) Add onion and tomato to egg mixture and stir together
5) Pour egg mixture into pan with beans and corn
6) Cover and let cook until eggs are no longer runny (there may still be a small amount of liquid on top)
7) Turn oven on to the Broil setting
8) Sprinkle egg mixture with cheddar and place in the oven (use tin foil to cover the metal handles)
9) Let the egg mixture finish cooking and the cheese melt and slightly brown (usually around 5 minutes)
10) Remove from oven and let cool
11) Optionally you can dust with Parmesan cheese
12) Enjoy

The Hudson's Bay Company Collection is both traditional and classic, and I am seeing it all over the place these days... you, your kid and your dog can sport this simple look, and along with that, you can decorate your house with the timeless pieces as well. My favourite piece is of course the multi-stripe point blanket; after Christmas I found the collections fleece multi-coloured throw on sale and scooped it, it definitely can't compare to the original wool blanket, but at a fraction of the price it will fill my multi-stripe blanket need until the dollars and cents line up for the real deal!

The Nike Training Club App is by far my favourite training app.... if you don't already have it downloaded on your phone or tablet, I highly recommend you get it... pronto!!!
This app is Great.... with a capital G! Not only is it free, but it incorporates a wide variety of exercises targeting all muscle groups into 15, 30 and 45 minutes workouts. I have had my fair share of sore days after using this app to get back into my routine (you know... when it is hard to even sit to go to the bathroom??!?? I have been there on more than one occasion!). I have been using the workouts on here for almost 3 years now, and I can attest that the workouts on this app helped me shed some of my post-baby lbs with little equipment needed... plus, all exercises can be completed from the comfort of your home. When Jet was a little younger I could get a start on it as soon as he went down for a nap and occasionally I could even be showered and ready for the day by the time he woke up (now adays this is wishful thinking!).
The app is fairly self-explanatory, all the exercises feature some super beautiful and ripped athlete with perfect form; this is great for two reasons.... the beautiful babe gives me motivation to keep working out, and the form video keeps me doing the exercises the RIGHT way, and not injuring myself in the process! In addition to all this, the app has lots of great tips and bonus workouts that you acquire as you complete more workouts.

At the beginning of December we decided it might be nice to visit somewhere warm to start off our 2014. With Christmas always being a busy time of year, I didn't have the time or the patience to start planning anything crazy for a holiday, all inclusive vacations are usually good "bang for your buck" so to speak, and require little planning on my part in terms of flights, accommodations, transport, etc, etc, etc... it felt good to just log on to the computer pick some days that would work and choose a resort that had good reviews on trip advisor! In no time flat I had our holiday booked, and was dreaming of warm weather, soft sand beaches and the sound of the ocean waves breaking in the background.... I didn't take into account that no matter what type of holiday you plan, you can't plan the weather to go along with it....
Mother nature was not so nice to us on our week away; of the 7 days we were gone, the sun came out for 2. We managed to make it down to the beach a couple of times; Jet didn't know what to think of the sand (and miraculously only a small amount ended up in his mouth), the ocean was a little too choppy to take him for a swim so we just played on land. The resort we stayed at was beautiful, we managed to make a couple trips into town which broke up the cooler days; however, much of our time was spent in our room, letting both Jet and Ryan recover from the colds they both inherited, and playing in the balcony jacuzzi (Thank goodness we had one!). By the end of the 7 days we were ready to say goodbye and get back to cold Edmonton...even with the 50 degree weather difference.
Needless to say this trip definitely won't go down as being the most memorable, I mean it is always nice to have some quality time with my boys away from home.... it just would have been nicer if we got to do more of it under a palapa on the beach...
Here are a few of the better moments from the week....
...I know I shouldn't complain, a vacation is a vacation, and by looking through these pictures you would never know the sun shone so little.... I guess I only took my camera out when it was nice...

Isn't it funny how even though I have been on maternity leave for the past 8 months and haven't been working my regular (Monday-Friday) job, I still count the days until Friday! It must be because I know Ryan will be home and it is nice having the extra help around the house. Also, weekends kind of mean a change of pace, sometimes we have plans, sometimes we don't, sometimes we stay in, sometimes we meet up with friends; I guess I also just look forward to waking up on Saturday morning, making coffee and chatting with Ryan while Jet plays.... I guess there isn't much not to like about that!

I found these pics from a few weeks ago....Jet was having a moment; some days it just doesn't seem like anything will make the kid happy (today seems like it might be one of those days), and I know, I shouldn't be complaining, Jet is a fantastic little guy, and fairly easy to please; but on this particular day he didn't want to be put down.... and when I did put him down this is what happened....
Poor little guy... I couldn't help but grab my camera to document it all, I mean what is a mom to do when she can't do anything right.... take pictures...obviously!!! I know a lot of my photos are happy smiling ones, but some days... look like this.....

Today I got a little carried away with "renovating" my blog, I haven't been entirely happy with the style of things around here so I thought I would try out a few new designs and see if anything sticks....
I was really drawn to this current layout, I like the simplicity of it all....the bits of yellow and pink spoke to me... but I am not sure if I will feel the same about it in a few days... I guess I will have to wait and see. Also, I want to look into changing my logo....alas, one thing at a time....

...but it tastes just as good, and is packed with nutrition which makes the smoothie I'm drinking today even better than anything I was drinking in Mexico!
I am sure you all already know juicing is the thing to be doing these days.... I myself haven't been able to part with the dollars in my bank account, nor do I have the room for another appliance in my tiny kitchen, so needless to say I am on the smoothie train (...until cupboard space permits).
January is always a slower, darker and colder time of year....today's smoothie was just what I needed to boost my mood. It is sooo important to be getting what you can nutritionally from the foods we eat; smoothies pack nutrients and vitamins into one delicious drink; which make them the "bee's knees" in my books! Here are the details on what I am drinking today...
Grocery List:
1 stalk organic kale
5 small organic mint leaves
1 tsp ginger
1/4 cup frozen berries (raspberry/blueberry mix)
1/4 organic apple
1/2 cup water
1 organic banana
1 tsp hemp hearts
...Combine all ingredients in your blender and.... well you know the rest.... Enjoy!

I have seen posts like this on various blogs, so I can't take any creative or originality credit for it, here are a few things I just can't help but rave/long for right now....
These days I am relishing my Nespresso coffee maker. In the age of single cup coffee makers, this machine is the cat's meow; I have the Citiz with Milk machine in "Limousine Black" and not only does it look good on my counter, but it brews my coffee perfect every time. Now this machine is definitely on the higher end of things price-wise when it comes to single-cup machines, but rest assured, the taste and quality you get in each cup is worth every last penny. Ryan and I are fairly big coffee drinkers, I try to use this machine every chance I get!
This sweater is just what I want for the cold days ahead....except it looks like I am a little late to the party.... xxsmall is definitely not going to fit.... maybe I can check in store for something a little larger!!
I have been coveting this flatware set for quite some time now.... how beautiful is it?!?!?!? Gold is the new black these days, and this set is definitely on-trend..... I may just have to bite bullet and purchase these gems for my next dinner party....
