Happy (Flashback) Friday....

I was organizing my photos from Hawaii for an upcoming post and couldn't get enough of this little man!! I decided todays Happy Friday would be devoted to a flashback of my happy little nephew Dierks in Hawaii! Him and Jet are going to be trouble in a few years... but for now they are just the sweetest little men; Dierks little laugh is infectious, and his eyes are so full of expression...


  Don't you just want to squeeze him?!?!

 I just love him so much!!
This weekend we will be visiting family in Prince Albert, Saskatchewan, both Jet and Dierks are tagging along, it should be a fun trip!!

Ryan and I first visited Hawaii in February 2013; at the time I was about 28 weeks pregnant and the trip was our last chance to get away and enjoy some time together just the two of us before baby. Hawaii was and is everything I had dreamed it would be and more; and I was thrilled to have part of this trip captured by the ever so talented and beautiful Jennifer Brotchie Photography!

Here are a few snaps from the maternity shoot we did with her last year...
I still get goosebumps when I look at these pictures, it was such a special time for Ryan and I, and Hawaii is definitely a special place for us now!!

When we decided we were going back this year for round 2, I immediately emailed Jenn so she could fit us in her schedule. Last year was my first time meeting Jenn, (and now I feel like I have known her for ages...I suppose that might be the beauty of social media, I get to see her life through instagram and Facebook!) and she was every bit accommodating both times we met with her!

Although I haven`t procured the pictures from this most recent shoot (I have some tough picking decisions to make! Ha), she posted a peak on her website  and I could not wait to share it with you all! I will most likely post the pictures we picked out once I have them, but in the meantime you can see some more of her work and our shoot here!

Along with her eye behind the camera, you can add travel agent extraordinaire to Jenn's list of talents. Jenn provided us with the best recommendations for places to go, see and eat during both our stays on the island, (she knows all the hidden gems, and local favourites most tourists don`t know about!) which made making decisions for this group of 6 so much easier!!

If you are heading to the Oahu area and thinking about a really great keepsake, I would highly recommend working with Jen, you definitely can`t get pictures like this ANYWHERE in Alberta... LOL and she was such a joy to work with as well!

Thanks again Jen for the beautiful work you do! I can`t wait to get some of these moments hung in our house!

....munchy crunchy kale chips

We all know kale is this amazing super food that we should probably be eating for breakfast, lunch and dinner, but lets be honest, this leafy green, in particular, is nothing to be desired in its raw untouched state...enter Kale Chips!!!

I  have been wanting to bake my own kale chips for a while now... I finally took the opportunity to do it last week and I am a little sad it took me this long... lets just say I will be throwing a few more bunches of kale in the cart next time I buy groceries. These delicious morsels are pretty much the easiest thing to make, and taste JUST like potato chips; needless to say the chips didn't last long around our house (we happen to have a chip aficionado who gobbled them up in no time flat!).
Here are the details on these crispy morsels of goodness...

Grocery List
1 bunch of curly green Kale
Olive Oil
Sea Salt
Pepper
optional: Cayenne Pepper (if you like a little kick!)

-Preheat oven to 350 degrees
-Clean leaves and dry using a paper towel
-Using a knife, cut out the stem and ribs of each piece of kale
-Chop the left over leaves into 2-3 inch pieces
-Place the leaves in a bowl and pour olive oil over top; use enough olive oil to lightly coat all the leaves and not drown them
-Sprinkle  your seasonings ie. salt, pepper and cayenne (or whatever other seasoning you want to add)  on top of kale and toss lightly 
-Spread kale onto a baking sheet making sure to leave room between the leaves and not overcrowd them
-Place baking sheet in the oven and bake for 15 min until crisp
-Remove, let cool 
-Enjoy!!
Kale chips are a really great alternative to potato chips and nutritionally speaking better bang for your buck... you can't really go wrong baking up a batch of these every once in a while!

I am hoping this weekend will bring us better health than this past week, both Jet and I have been suffering from colds and I can't remember the last time I felt this stuffy!! I feel like things have been looking up the last couple days.... so I have high hopes that I have seen the worst of what this cold season had to offer, and now that SPRING (!!!!!) is here, I have lots to look forward to!

I have actually been doing lots of thinking this last week about our backyard, the garden, and everything I am so excited to get going on once all this snow is gone!! I love this time of year, a new season means new goals, fun ideas, and a fresh outlook! Whats not to love about the fact that the days are getting longer, the snow piles are getting smaller and before we know it the greens that will take us through summer will be here to stay???!!!

On another note, I was going through my photos last night and came across a few I snapped while we were away. I thought these photos were fitting for the week we have had around here, naps and cuddles will cure any cold....


There is nothing more peaceful than a sleeping baby?! Am I right?!

10 things you need for flying with a baby!

I always get a little bit antsy when I think about flying with a baby; I know I shouldn't feel that way, (Jet has been a great little traveller thus far) yet the worry always looms in the back of my head and my imagination gets me thinking about being trapped on a plane with an inconsolable baby....walking up and down the aisles while I get dirty looks from half asleep passengers who were woken by the screaming!!! Ok ok, I digress, we have flown with Jet a few times now, and that has never happened... but I should count my lucky stars because I have seen it happen to other parents and there is nothing worse.

When I prepare for travel, I over-prepare for the flights, here is a list of the essential items I have found to be useful up in the air:


1. Gate-Check Bag- We purchased this bag from Target, and it was perfect. I only just realized it isn't actually meant for use when you are checking luggage, but we used it that way and had no problems what so ever. Occasionally the airline you are using might put your car seat in a plastic bag, this red bag, served the same purpose and allowed us to squeeze a few extra essentials in along with it (Also, the price on this bag was a lot less than renting a car seat with a rental company at our destination, which was another win for me!).

2. Soothers: During take-off and landing a soother was a necessity. Babies don't know how to pop their ears during take off and landing, and a soother can make all the difference in helping them stabilize their ear pressure.

3. Diapers: I know this is a obvious one, but pack a couple extra along with an extra change of clothes, you never know what your babies body is going to do, and a diaper explosion is one of my worst nightmares; its never a bad idea to have a few too many diapers!!

4. Water Bottle: We all know how dry it can be on airplanes, and keeping hydrated is so important, pack a water bottle and ask the flight attendant to fill it with water as soon as you board.

5. Wipes, Wipes, Wipes: Kind of like diapers, another obvious one. Wipes are great for everything, washing hands and faces, wiping the seat back tray and arms of the chair... so many uses and an absolute necessity!

6. Tinker Toys: The last few times I have travelled with Jet, I have purchased in a advance a few small NEW toys specifically for the flight. As Jet gets bored, I introduce a new toy for him to play with; I only give him one toy at a time and I have found it keeps him occupied for a good amount of time before we transition to a nap or a snack.

7. Blanket: Along with keeping you and baby warm when nap time approaches, a blanket also doubles as a seat cover to keep pesky germs away.

8. Ergo Carrier: Some people might not agree with this one, but I have found it to be very useful with Jet, especially when traveling through terminals, or getting to my seat on the plane. I have found it to be a secure place for baby, and it gives me extra hands for carrying my carry-on (or Starbucks)!!

9. Baby Food Pouches: I really like these pouches of baby food, they making feeding Jet so clean and easy, especially since Jet has figured out how to suck the liquid right out of the top! I highly recommend you teach your child how to eat from these packages, it is much easier compared to the traditional methods of spoon feeding them!!

10: Snacks: Always a great way to mix things up, I try to get a couple snacks Jet hasn't tried before and introduce them to him on the plane. Most recently, I tried PC Puffs and PC Organics Fruit and Vegetable Snack (both were good options). I try to keep the snacks easy and avoid anything that is going to cause a huge mess.

The last tip I have is based on seat selection, if you get the chance to book your seats in advance, I highly recommend trying to book seats near the back of the plane. Jet currently flies for free and therefore his seat becomes my lap when the flight is full. If there is even one empty seat on the flight you want it to be next to you so babe has his/her own place to sit. Your odds will go up of getting this seat if you book near the back of the plane. In addition to this, if the seats on the plane come in groups of 3 and you are flying with another adult I always book both the aisle and window seat for myself and Ryan, leaving the centre seat open. The likelihood that someone will book a centre seat at the back of the plane (unless it is full) becomes less, and really even if it does get booked, the chance that centre seat person will want to keep you and your flight partner separated on the flight would be CRAZY on their part!! It is definetely worth a try to get the extra seat for babe!!

I don't usually do very much baking, but when I do I like to make recipes that aren't all "fluff"...I used the Applesauce Oatmeal Muffins recipe from Tosca Reno's Eat Clean Cookbook as the base for the batch of muffins I made a couple weeks back. With the addition of coconut and chocolate to sweeten them, they didn't last long around our house....


Grocery List:
1 Cup dry old fashioned oatmeal flakes
1 Cup applesauce (I used sweetened as I found them to be rather bland with unsweetened)
1/2 Cup almond milk
2 egg whites
2 Tbsp ground flax seed
2 1/2 Tbsp canola oil

1 Tbsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
3/4 Cup whole wheat flour
1/4 Cup raisin
1/4 Cup chocolate chips
1/4 Cup dry medium coconut
1/4 Cup goji berries

Preheat oven to 375 degrees. Line muffin pan with liners or spray with cooking spray.

In a medium bowl, combine first six ingredients

In another medium sized bowl, combine the remaining dry ingredients. Make a well in the center of the dry ingredients, and pour the wet ingredients with the dry.

Stir until combined.

Fill each muffin cup 3/4 full and throw them in the oven. 

Bake for 15-17 minutes or until an inserted toothpick comes out clean.

Remove from oven and let cool.


Enjoy!

Happy St. Patty`s day! We celebrated on Saturday night with the rowdiest Irish family we know, and in honour of this special day I thought I would put up some of the green items I have been coveting as of late!!!

I have been under the weather today, so there will be no Guinness for moi tonight, but maybe a shot of Jameson`s will cure this nasty cold?!?! I am sure it will knock me off my feet and put me right to sleep.... hmmm... that might be just what the doctor ordered!

This week we are taking in the sights and sounds on the beautiful island of Oahu! We visited Hawaii last year and enjoyed ourselves so much we (along with my sisters family) had to come back for another holiday this year!

With the little men in tow we decided it might be nice to stay in the resort town of Ko 'Olina. Situated on the west side of Oahu, this place offers all the essentials including 5 perfect lagoons which protect the beach area from big waves, and make swimming with the boys in the ocean a little easier!

Packing for holidays is never easy, here are three things I made sure to pack on my winter vacation this year...

I Love Love Love my Sony stereo headphones, I initially purchased these bad boys when I was pregnant with Jet, and would put them on my belly and play music! It was really fun to watch my baby move, it was like he was having a little dance party in my belly! Now adays these earphones are great for plane rides or sitting by the pool, they fit comfortably over my ears, the sound quality is excellent and I don't have to worry about an ear bud falling out of my ear.... also they don`t cost an arm and a leg like some of the other brands out there... at a price tag of $19.99 they are totally affordable and a great purchase.

These Aviators are amazing.... I want a pair.... bad.... I already have a pair of regular Ray-Ban Aviators, but these flash lens ones are just too cool!!! I might just have to add to my collection... what do you think?!

I found this skirt at Old Navy and decided I needed it....it is honestly the perfect skirt for a warm vacation, you can dress it down with a cute tank and flip flops for a day at the beach, or dress it up with a fancier top and some pumps for a night out... either way it is cute and versatile and exactly what I needed to keep things light in the luggage department!

Sometimes life gets crazy, its easy to feel overwelmed when you take on too many tasks, I really appreciated Grace's perspective on it here.

I saw this southwest casserole and have put it on my list of NEED to try recipes!!! Super easy and it sounds delish!

I was really inspired after reading this article by Emma at a Beautiful Mess.... so insightful and encouraging.

The gals at Navy Darling  have some insight into the controversial decision to go back to work after baby... I really appreciated this article, especially with my mat-leave winding down in a few months.

For some reason lunch is always a challenging thing for me, I meal plan all my dinners throughout the week, and breakfast is usually always the same thing... but lunch is never planned... here are 15 vegan lunch ideas!

I liked Kelle's thoughts on the "Can't also Crisis".

It seems like every blogger in my blogroll is talking about this bag.... and I can see why!! It would be great for when I go back to work... however it seems it might be near impossible to get one.... the wait list is lengthy and I am going to need something sooner rather than later...

This hanging vase is gorgeous, but wouldn't last long in our house (with Jet around and all); what a gorgeous idea!

I have recently been considering purchasing one of these bracelets as a way to monitor my daily energy output... have you tried something like this, or have any recommendations about them??

I am holidaying this week with the family, but not to worry, I had this and a couple other posts planned ahead of time... if I have time while I am away I will post some pics, but no promises!

Winter had really made itself at home these last few weeks and I am ready to say "so long old man".... I thought March was supposed to bring warmer temperatures...that seems like wishful thinking these last few days.....

On a lighter note, Jet is 10 months today..... where did the time go?! But really?? I am back at work in less than 2 months.... and life will change yet again as we adapt to another new way of life!!
